- Bread– Choose Whole-grain or Whole-Wheat bread as it is higher in fibre and nutrients than white bread.1 It is important to choose at least day-old bread as fresh bread will become soggy. In this recipe, we have used Pane di Casa type bread, a rustic Italian loaf.
- Ricotta- A low fat smooth Ricotta cheese has been used for this easy healthy breakfast recipe. Ricotta is lower in fat than some other cheese and is high in protein.2

Creamy Vanilla Ricotta and Banana on Toast
Ingredients
- 2 slices whole-grain toast 70g
- 1 medium banana sliced
- 2 tsp honey
Creamy Vanilla Ricotta
- 100 g smooth low fat ricotta
- 1/4 tsp vanilla extract
Instructions
- Mix the ricotta and vanilla together in a small bowl.
- Toast the bread.
- Spread the ricotta mixture onto the toast.
- Top with sliced banana and drizzle with honey.

- Other types of fruit can be substituted instead of banana – Try sliced fresh or grilled peaches or sliced figs.
