Healthy Cheese and Vegetable Omelette
A delicious and quick breakfast or light dinner, filled with cheese and vegetables.
Ingredients
- 2 large eggs
- 1 tbs water
- 1 tbs tomato, diced
- 1 tbs onion, diced
- 1 tbs capsicum, diced (bell pepper – green or red)
- 1 tbs mushroom, diced
- 1 tbs parsley
- 25 g grated cheese, low fat
- salt and pepper to taste
- 1 spray oil
Instructions
- Crack 2 eggs into a small bowl and whisk together with 1 tbs water, and salt and pepper.
- Use oil spray to lightly grease a small frypan over a medium heat.
- Pour the egg mixture into the frypan and cook for about 1 minute.
- Sprinkle the chopped vegetables, parsley and cheese over the egg.
- Put on a lid and cook for 3- 4 minutes.
- Remove the lid and carefully fold it in half and serve.
