Healthy No Added Sugar Banana Bread

- 1/2 cup dates, chopped
- 1/2 cup boiling water
- 1 tsp baking soda
- 3 medium bananas* very ripe
- 1/2 cup applesauce/ apple puree unsweetened
- 2 large eggs, lightly beaten
- 1 tsp vanilla extract
- 1 3/4 cup wholewheat plain flour
- 2 tsp baking powder
- 1 tsp cinnamon powder optional
Instructions
- Preheat the oven to 170° C /350° F **
- Lightly grease a non-stick 9 x 5" loaf pan.
- Add chopped dates, 1/2 cup boiled water and baking soda to a small bowl and stir to mix. Put aside and let soak for 15 minutes
- Add bananas, dates and water mixture*, eggs, applesauce and vanilla to a blender and process for about a minute or until smooth.
- In another large bowl, mix the dry ingredients together – flour, baking powder and cinnamon.
- Add the banana mixture to the flour mixture and mix until combined. Be careful not to overmix.
- Pour mixture into the loaf pan and cook in the oven for about 45 -50 minutes or until golden and cooked through.***
- Allow to cool before slicing.
