Healthy No Added Sugar Banana Bread

Ingredients
  

  • 1/2 cup dates, chopped
  • 1/2 cup boiling water
  • 1 tsp baking soda
  • 3 medium bananas* very ripe
  • 1/2 cup applesauce/ apple puree unsweetened
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1 3/4 cup wholewheat plain flour
  • 2 tsp baking powder
  • 1 tsp cinnamon powder optional

Instructions
 

  • Preheat the oven to 170° C /350° F **
  • Lightly grease a non-stick 9 x 5" loaf pan.
  • Add chopped dates, 1/2 cup boiled water and baking soda to a small bowl and stir to mix. Put aside and let soak for 15 minutes
  • Add bananas, dates and water mixture*, eggs, applesauce and vanilla to a blender and process for about a minute or until smooth.
  • In another large bowl, mix the dry ingredients together – flour, baking powder and cinnamon.
  • Add the banana mixture to the flour mixture and mix until combined. Be careful not to overmix.
  • Pour mixture into the loaf pan and cook in the oven for about 45 -50 minutes or until golden and cooked through.***
  • Allow to cool before slicing.

Notes

*Make sure the date mixture has cooled before adding to the blender otherwise the eggs might cook:)
**Oven temperatures can vary between brands so adjust if temperature and time according to your oven.
***Test with a skewer to check for doneness – it should come out clean when cooked through.
