This recipe uses low-fat greek yoghurt, cucumber, garlic and fresh mint. Try serving it with rice crackers, raw vegetable sticks or as a spread on a chicken or felafel wrap.

Ingredients
  

  • 1 cup greek yoghurt, low-fat
  • 1/2 cup cucumber, grated see notes
  • 1 clove garlic, crushed
  • 2 tbs fresh mint, chopped
  • salt and pepper to taste

Instructions
 

  • Mix all of the ingedients together in a small bowl and serve.

Notes

Cucumber – A telegraph cucumber is used in this recipe. Peel and grate the cucumber, then squeeze it to remove excess liquid before adding to the yoghurt.
